“It is very simple you can make your own butter shortbread or buy it from your local store, farm shop or farmers` market.
The Strawberry short cake is a layered cake.
1st layer is the base of shortbread. Then add whipped cream or very thick double cream then add thickly sliced strawberries (her favourite are Elsanta) to this base. Repeat this twice more so that you have three layers.
Add a final top of short bread and decorate this layer with strawberries and sprinkle with icing sugar and add a sprig of mint for decoration.
Place into the fridge but bring it out of the fridge at least 30 minutes before serving for full flavour of the strawberry.
