Roasted Butternut Squash
Once again squashes are becoming popular. We see them at this time of year in all wonderful shapes and sizes! If you are still unsure of what to do with them try this easy recipe…..
1 butternut squash, peeled and cut into 1-inch cubes
2 medium onions, coarsely chopped
3 carrots, peeled and cut into 1/2-inch diagonal slices
1 tablespoon dark brown sugar
¼ teaspoon salt
1 tablespoon butter or margarine, melted
Preheat oven to 190°c. Line large baking sheet with foil and coat with cooking spray. Arrange vegetables in single layer on foil; coat lightly with cooking spray. Sprinkle vegetables with brown sugar, season to taste
Bake for 30 minutes. Stir gently; bake for another 10 to 15 minutes more or until vegetables are tender. Remove from oven. Drizzle with butter and serve!
